Pecan Cajun Encrusted Salmon and Watermelon and Mozzarella Arugula Salad!
Cajun Pecan Encrusted Salmon:
Preheat oven to 450
2T coconut oil or olive oil
2t lemon juice
1t cajun seasoning
1/3 cup crushed pecans
1T crushed crackers or breadcrumb
4- 6oz salmon filets
*Combine oil, lemon juice, cajun seasoning
*Combine breadcrumbs, pecans
Spray your pan & place dry salmon filets on the pan. Braise the salmon with the wet seasoning. Then sprinkle the dry seasoning on the salmon.
Bake for 10-12 minutes until desired temperature.
Watermelon, Mozzarella arugula salad
6 cups baby arugula
1 container of mozzarella or mozzarella bites
3 cups chopped watermelon
1T lemon juice
1T lime juice
1T olive oil
1t salt
*Combine wet ingredients. Fold in baby arugula with wet ingredients. Add watermelon and mozzarella.
